  • What are cacao nibs, exactly?

Take a cacao bean, ferment it, roast it, crack it, and remove the shell. What's left are nibs: the pure raw material of every chocolate bar we make. They taste like very dark chocolate with zero sugar, plus a toasty crunch. When people ask what 100% cacao really tastes like, this is the answer.

  • Single origin: OKO Caribe

These nibs come from OKO Caribe in the Dominican Republic, one of our long-time Direct Trade partners. We pay above Fair Trade prices and publish the numbers in our annual Transparency Report. Because nibs are a single ingredient, the origin is the flavor: expect fruit, earth, and a clean roasted finish.

  • How to use them

Straight snacking or trail mix. Over yogurt, oatmeal, or ice cream for crunch without candy. Blended into smoothies. Folded into cookies, granola, and chocolate bark. Steeped into cold brew or infused into cream for desserts. Use them like a nut that tastes like chocolate. Prefer them with a chocolate shell? See our Chocolate Covered Cacao Nibs.

 What are cacao nibs?

Roasted cacao beans cracked into small pieces with the shell removed. They're pure cacao, the exact ingredient we stone grind into chocolate, with no sugar or additives.

Are cacao nibs the same as chocolate chips?

No. Chocolate chips are made from chocolate (cacao plus sugar and cocoa butter). Nibs are the unprocessed ingredient: 100% cacao, zero sugar, with a crunchy, toasty bite.

Are these nibs raw or roasted?

Lightly roasted. Roasting develops the deep chocolate flavor and the crunch; it's the same roast we use before stone grinding our chocolate.

Do cacao nibs have caffeine?

Yes, modestly. Cacao contains caffeine and theobromine; a serving of nibs delivers noticeably less caffeine than a cup of coffee.

Are cacao nibs keto and vegan?

Yes. One ingredient (organic cacao beans), zero sugar, vegan, dairy free, soy free, and Certified Gluten Free.

 Want them covered in chocolate?

We do that too: the same nibs blanketed in our stoneground 80% dark chocolate. See Chocolate Covered Cacao Nibs.
