Couverture: the Pro Line exception
Almost everything else we make celebrates texture. Couverture is different by definition: extra cocoa butter and a fine grind give it the fluidity to coat, enrobe, and glaze. We still start with the same organic, Direct Trade Certified cacao and the same Somerville, MA factory. We just finish this one for the kitchen instead of the wrapper.

Built for tempering
The 3/8 inch squares melt evenly with no chopping. For a working temper, melt to 115–120°F, cool to 81–82°F while seeding, then hold at 88–90°F. You'll get clean snap and gloss for dipped fruit, bonbons, enrobed cookies, and glazes.

What it tastes like
Earthy and mellow at 53% cacao, with notes of apricot and honey. Sweet enough to play well in desserts, dark enough to still taste like real cacao.

 What is couverture chocolate?
Couverture is chocolate made with a higher proportion of cocoa butter and a fine grind, so it melts fluid and tempers with snap and shine. It's the professional standard for dipping, enrobing, and glazing.
How is this different from Taza baking chocolate?
Our baking chocolate is stone ground and textured, like most things we make. The couverture line is refined smooth on purpose, because coating and glazing demand it.
What are the tempering temperatures for 53% dark couverture?
Melt to 115–120°F, cool to 81–82°F, work at 88–90°F. A simple seeding method works well with the 3/8 inch squares.
How much chocolate is in the bag?
3 kg, or 6.6 lb, in 3/8 inch squares. Roughly enough to enrobe 300 or more bonbons or coat several sheet pans of dipped goods.

Cool, dry, and dark: 60–70°F is ideal. Sealed against odors, couverture keeps for a year or more.
