Ingredients:
Triple Chocolate Chocolate Chip Cookies
- 2 cups flour
- 1/4 tsp salt
- 3/4 tsp baking soda
- 1/2 cup cocoa powder
- 2 Packages (4 discs) Cacao Puro
- 2 sticks butter, softened
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp vanilla
- 2 eggs, room temperature
- 1 Deliciously Dark Amaze Bar roughly chopped
Ice Cream Sandwiches + Magic Shell
- 1 1/2 quarts chocolate chip ice cream
- 1 Deliciously Dark Amaze Bar roughly chopped
- 1 tbsp coconut oil
- Preheat oven to 375 degrees and line 3 baking sheets with parchment paper.
- In a medium bowl, whisk flour, salt, baking soda and cocoa powder.
- Break up Cacao Puro discs in a microwave-safe bowl and microwave in 10 second intervals, stirring in between, for about 1 minute total, until melted and smooth. Set aside.
- In a separate large bowl, beat butter and sugars together on medium until creamy and fluffy. Scrape down the sides of the bowl to ensure butter is incorporated. Add vanilla and beat to combine.
- Add eggs one at a time, beating to combine each. Add melted chocolate and beat until incorporated.
- Gradually add the dry ingredients and beat until just combined. You can also use a plastic spatula to incorporate them and ensure the dough isn't overmixed.
- Stir in the chopped Deliciously Dark bar then chill dough for 15-20 minutes before baking.
- Use a 1.5 ounce cookie scoop to scoop about 18 cookies into balls. Place 6 cookie dough balls per baking sheet. Press on remaining chocolate chunks.
- Bake for 10-12 minutes, remove from oven, and gently whack cookie sheet on counter to help flatten cookies.
- Let the cookies sit on the baking sheet for 10 minutes, then remove to a wire rack to let cool completely.
- Once cookies are completely cool, scoop one scoop of ice cream onto half of the cookies, topping each with another cookie, gently pressing down with your palm to smoosh the sandwich. Place the sandwiches onto a cool baking sheet and freeze for 20 minutes.
- Meanwhile, add remaining chopped Deliciously Dark bar and coconut oil to a microwave-safe bowl. Microwave in 10 second intervals, stirring in between, for about 1 minute total, until melted and smooth. Set aside to cool while sandwiches freeze.
- Remove the sandwiches from the freezer and dip each into the melted chocolate. Enjoy immediately or return them to the freezer until ready to serve.
