Whether you’re hiking up a mountain or just in the office, it’s important to keep fueled throughout the day! These chewy bars are packed with vitamins, minerals, fatty acids, and fiber so pack a couple in your bag in case of snack emergency.
Ingredients:
8 oz medjool dates, pitted and roughly chopped
4 tbsp sunbutter
3 tbsp coconut oil
¾ cup sunflower seeds
¾ cup coconut flakes
2 oz roasted nibs
2 bars 95% Wicked Dark Amaze Bar
1 tbsp coconut oil

9” square silicone mold
Food processor
To Prepare:
1. Pulse dates, sunbutter, and 2 tbsp oil until a rough paste forms. Add sunflower seeds, coconut, and nibs; pulse to combine. Press mixture into mold until even, about ½-inch thick. Set aside.
2. In a small bowl, microwave chocolate and coconut oil 30 seconds at a time until no solid pieces remain, ~2 minutes. Pour directly onto blended mixture. Using a rubber spatula, spread chocolate to all edges. Chill in the fridge until set, at least 2 hours. Pro-tip: if you’re taking these bars out on the road, leave the coconut oil out of this top layer so it doesn’t melt as quickly.
3. Remove from mold and slice in half. Divide each slice into 4 pieces. Chill in an airtight container for up to 2 weeks.
